Two for one Pork Roast recipes

I often cook some sort of meat one day and then use the same meat for a different meal.  I add a seasoning or something to transform it into totally different thing.

Pulled pork and roasted potatoes

1 good sized pork roast (boneless preferably)

2-3 tbsp Liquid smoke

3 garlic cloves minced

1 onion chopped

Bbq sauce (optional)

Place onions in the bottom of the crockpot, sit roast on top of onions, sprinkle garlic on top of roast and salt and pepper.  Pour the liquid smoke on top of the meat and cover and cook on low for 8 hours or high for 6.  (till meat is easily shredded with two forks)   Shred meat with two forks and add as much bbq sauce as you like, serve on buns with a side of roasted potatoes and a veggie of your choice.

To roast potatoes :

Chop up 2-3 good size potatoes and toss in olive oil and roast on a sheet pan at 400 degrees turning once till done and almost crispy.  (about 30 minutes or so should do it)

*This will make enough meat for two full meals.   What I do is I cook this and immediately after shredding I remove half of the meat and freeze in a Ziploc baggie for pork tostadas or pork tacos later on in the week* (recipe to follow)

 

Pulled pork tostadas

Pulled pork already cooked and shredded from prior recipe

Corn tortillas

1 can rotel tomatoes

Toppings:

Shredded lettuce, shredded cheese, sliced green onions, sliced black olives, sour cream, salsa or taco sauce, lime wedges, refried beans (optional).   Or whatever other taco seasonings you like.

 

Reheat the meat and add rotel tomatoes to it.  Cook down a bit till liquid disappears or you can drain the tomatoes.

In a small pot (big enough to fit tortillas) heat some oil, and fry each tortilla till crispy and drain on paper towels.

To assemble….each person puts a little meat, refried beans and whatever toppings they like and enjoy!!  J    You can skip the tortilla frying part and just get a bag of tostitos and make a pulled pork taco salad with this as well.  Super easy and quite tasty.
