Taco Pasta

This is a great and easy meal for those nights when you don’t have a lot of time but want something hearty to fill up your hungry family.   (I will post a pic at a later date when I make this again)  🙂

Taco pasta

1 box elbow macaroni

1 lb ground beef, turkey, chicken or soy crumbles

1 packet of taco seasoning

1 can rotel tomatoes with chilis

½ onion chopped

½ green bell pepper & ½ red bell pepper chopped

1 cup frozen corn kernels (thawed)

1 cup sour cream

Shredded cheddar cheese (to put on top)

Sliced green onions (optional)

Sliced black olives (optional)


Preheat oven to 350 degreesF

Boil water for pasta and cook according to directions. Crumble and cook meat, onions and peppers.  Add in taco seasoning and rotel tomatoes (juice and all).  Simmer this till incorporated, you can add a little water too in order to make it more (sauce like).   Add in corn, sour cream, green onions and black olives and stir to combine.  *if sauce is too thick, thin it down with a little water*  Toss the cooked pasta into the sauce and heat together.  Put the pasta and sauce into a 9×13 baking dish and top with cheddar cheese.  Bake in a 350 oven till cheese is melted.  Serve with a  simple side salad of lettuce and tomatoes and ranch.    Enjoy!!  J
