Stuffed Acorn Squash

Another recipe from last week that was AMAZING was this beautiful stuffed roasted acorn squash.  I saw a video on how to make it from the Beachbody site and I had to try it.  Although I tweaked it just a little bit.


Instead of Quinoa like the recipe called for I used this yummy stuff!!  (picture above courtesy of Amazon).  You cook it just like you do rice or quinoa but this has so much texture and depth of character you will feel like you are eating a forbidden food, when really it is good for you!

I then added in some already grilled chicken that I chopped up, a little feta cheese, fresh chopped parsley, red wine vinegar and a little bit of olive oil.    The squash were cut in half and seeded and I rubbed them down with a tiny bit of olive oil and baked upside down on a baking sheet for about 20 minutes at 400 degrees.  When they were done I scooped in about 2/3 of a cup of the mixture into the cavity to fill it up and then enjoy!!  Super simple lunch or supper.  They are even good cold the next day!!

This will definitely be in our meal rotation from now on as well.  I hope you will give it a try.
