Bacon Infused Waffles with Balsamic Strawberries

Thus morning I awoke with a recipe on my mind.  I am honestly not sure how or why this happens to me.  Well, maybe I do know how it happens.  I love the show ‘Chopped’.  My husband and kids are all lovers and habitual watchers of this amazing show.  When they unveil the basket ingredients, some of which I have never heard of. Let alone tasted!   I like that no matter how exotic the food is, the judges and the host can explain what each thing tastes similar to.

Now that I have revealed my fascination with all things foodie, I want to share how I created a super delicious breakfast for my family and it was really quite simple.  It just sounds fancy!

Instructions:
Preheat your waffle maker per instructions.

Chop up about 5-6 slices crisp bacon. (I just happened to have some leftover from breakfast yesterday)

Waffle batter-  For this I used regular packaged pancake mix (I use Krusteaz brand).  Into the batter I add about 1 tablespoon of sugar.
Set this aside while the waffle iron heats up and you prep the strawberries.

Strawberries w/ balsamic-  Rinse, hull and quarter about a pint of strawberries into a bowl.  Sprinkle about 3-4 Tablespoons of sugar on the strawberries. (You may use less or more depending on how sweet your fruit is to begin with).
Toss the berries in the sugar and let them masserate for a few minutes, then add in about 3 Tablespoons of a good balsamic vinegar.  Toss and set aside.

Make your waffles-  When the waffle maker is heated, spray with cooking spray and pour batter into the waffle iron, sprinkle with chopped bacon and make waffles as you normally would.

When done, assemble on a plate with masserated balsamic strawberries and top with whipped cream and a light drizzle of real maple syrup.

        1. My kids and hubby always tell me I should go on there too. I think I would be too freaked out with that clock ticking. But it is so informative, as you said. I too have learned so many techniques from watching it. 🙂

          1. Yes, the clock thing would freak me out too..That’s why they cut their fingers sometimes because they’re rushing so much!! Indeed I’ve learned techniques as well as foods I’ve never heard of before…exotic stuff!
